Spamming canola is a good strategy. I usually do that, spam canola and sell it when great demand for it hits. Most of the time it's enough to buy you the biggest harvester and a big field on easy/ just harvester on medium.

What difficulty are you playing on? On first map you can easily make a fortune on easy/medium by buying a chainsaw, going to the lumber mill with a tractor, cut trees down and push them into the pond with a tractor. You get 15-30K per tree on medium
